The Healing Power of Garlic

Garlic has been treasured for thousands of years as both a flavorful food and a traditional healing remedy. Modern research suggests that many of garlic's health-promoting properties are linked to a sulfur compound called allicin. However, to get the greatest benefit from garlic, it must be prepared properly.

In this video, Dr. Mandell explains how to maximize the health benefits of garlic by unlocking and preserving allicin through a few simple preparation and cooking techniques.

⚗️ Activate the Allicin

Rest the minced/chopped/crushed garlic for 10–15 minutes in order to activate the allicin.

Garlic contains a powerful sulfur compound called allicin, which is believed to be responsible for many of its health-supporting properties.

Interestingly, allicin is not present in an intact garlic clove. It is formed only when garlic is chopped, crushed, or minced, triggering a natural enzymatic reaction.

To maximize allicin formation:

  • Mince, crush, or chop fresh garlic.

  • Allow it to rest for 10–15 minutes before consuming or cooking.

This resting period gives the enzyme alliinase time to convert garlic's natural sulfur compounds into allicin.

🔥 Cooking Tips for Garlic

For best results, add garlic toward the end of cooking whenever possible.

Allicin is heat-sensitive, and prolonged exposure to high temperatures can reduce its concentration. Allowing garlic to rest after chopping and before cooking helps maximize allicin formation beforehand.

To preserve more of garlic's beneficial compounds:

  • Chop, crush, or mince garlic and allow it to rest for 10–15 minutes before cooking.

  • Avoid prolonged high-heat cooking whenever possible.

  • Add garlic during the final stages of cooking to help retain more of its beneficial compounds.

Even when cooked, garlic continues to contain valuable sulfur compounds that may contribute to its health-supporting effects.

🥗 Fresh Garlic vs. Garlic Supplements

While garlic supplements are popular, they may not provide all the benefits associated with fresh garlic.

Why Supplements May Fall Short

Allicin is highly unstable

Allicin is formed only when fresh garlic is chopped, crushed, or minced. Because it is highly unstable, it can be difficult to preserve during manufacturing and storage.

Lower bioavailability

Freshly prepared garlic produces allicin naturally at the time of consumption. Depending on the formulation, some supplements may deliver lower amounts of active compounds than fresh garlic.

Research often favors fresh garlic

Many studies demonstrating garlic's benefits have been conducted using fresh garlic or preparations that closely mimic fresh garlic's active compounds.

Product quality varies

Potency, purity, and active compound content can vary significantly among garlic supplements.

When Supplements May Be Helpful

For individuals who cannot tolerate fresh garlic because of its strong flavor, odor, or digestive effects, a high-quality standardized garlic supplement—particularly aged garlic extract—may provide some benefit.

In short: Fresh garlic is the gold standard. When chopped or crushed and allowed to rest before consumption, raw or lightly cooked garlic provides the greatest opportunity for allicin formation and associated health benefits.
