Steam for 5 minutes. Steam for 5 minutes 💡 For even greater nutritional benefits, top the salad with steamed and chilled mussels. These nutrient-dense shellfish provide additional omega-3 fatty acids, vitamin B12, iron, zinc, and other essential minerals that support metabolic health, brain function, and overall wellness. 🦪 How Long to Steam Mussels Place cleaned mussels in a steamer basket or pot with about 1 inch of water, broth, or white wine. Bring the liquid to a boil. Cover tightly with a lid. Steam for 5–7 minutes, shaking the pot once or twice during cooking. ✅ How to Tell They're Done The shells should open fully. The meat should be plump and opaque. Discard any mussels that remain tightly closed after cooking. ⚠️ Avoid Overcooking Mussels become rubbery if steamed too long. For salads such as your Healing Ahi Tuna Salad, I recommend: Steam for 5 minutes Immediately transfer to an ice bath or place in the refrigerator to chill Remove from shells once cooled Serve chilled over the salad A serving of 6–8 chilled mussels on top of the salad adds a substantial boost of vitamins and minerals. 👩🍳 Chef Janine's Tip For extra flavor, steam the mussels in: 🍋 Water with lemon slices 🌿 Fresh parsley 🧄 Crushed garlic cloves 🍷 A splash of dry white wine (optional) The mussels will absorb subtle Mediterranean flavors that pair beautifully with arugula, olive oil, lemon, and grilled ahi tuna. Fatty fish, shellfish, fermented vegetables, and probiotic-rich foods provide a remarkable combination of omega-3 fatty acids, vitamin D, beneficial bacteria, minerals, and high-quality protein that support the body from the inside out. Whether you begin with a simple grilled ahi tuna salad, add steamed mussels to your weekly menu, or incorporate fermented vegetables as regular side dishes, these small dietary changes can have a meaningful impact on your long-term wellness. Consistency matters far more than perfection. As Chef Janine often reminds her clients, true health is built meal by meal, choice by choice. Nourish your body with real food, embrace the wisdom of traditional ingredients, and allow nature's most nutrient-rich foods to become part of your healing journey. - Be Aware of Palm-Scanning Technology at Whole Foods!
Amazon doubles down on palm recognition across its network of Whole Foods grocery stores. Whole Foods has now transformed your hands into a money-dispensing machine. Amazon One's dystopian palm payment technology is coming to ALL 500+ Whole Foods grocery stores in the U.S. Whole Foods encourage customers to get their palm prints scanned, share their bank card information and provide their phone numbers to set up their biometric accounts. Once set up, all customers need to do is to hover a palm over the scanning device to pay —just as you would place a hand on the Bible— and they are good to go. Be Aware of Potential Risks! Whole Foods claims that this service will make make it quicker and easier for customers to pay for their groceries. May be so, but such overengineered "convenience" systems can be extremely risky, as people's biometric data is collected and stored on cloud (and sometimes sold). Despite the assurances of any technology company, storing biometric data in the cloud is disaster in the waiting. The consequences of a data breach can be extremely severe. Obviously, when (not if) your biometric data gets stolen, you can’t exactly call the body bank and order a new palm. There are several other risks with such overengineered "convenience" systems. Biometrics technology assumes that a person’s body doesn't change. Yet, life events like weight gain or loss, injury or disability can surely effect a person’s ability to authenticate, as data captured by these systems cannot be modified once they are created. Such biometric systems also have great difficulty to take samples from non-white skin. So, what do you do? Just go to Sprouts, Trader Joe’s or Aldi instead.
- Chef Janine's Top 7 Vegetables To Plant In Spring
If you find yourself thinking about planting something edible as we are entering spring, but not sure what, this post is for you. Here are my favorite vegetables to plant in spring – these are the ones I enjoy cooking with and eating. Please note that in a matter of weeks you could be harvesting fresh produce from some vegetables, such as the lettuce, if start with seedlings! If you start with seeds, it may take a little longer. Of course, some of the veggies take several months to produce their crop, so you’ll be eating them well into autumn. Many of these can also be planted several times through spring and into early summer, to stagger the harvest and keep that fresh produce coming. GENERAL VEGGIE CARE All veggies need to be kept well-watered and will benefit from liquid feeding every seven to 10 days as they grow. For best results, plant veggies in a spot that gets sun from early morning until early afternoon. On hot days many veggies need shade to reduce heat and water stress. You can use a screen, tall plantings on the western side of the bed, or toss over a shadecloth on a hot day for temporary shade. Water veggies at least once a day (more frequently during heatwaves) and spend time checking for pests that may eat your veggies before you can. Keep the area free of weeds, too. Tip: Nurture new plantings. They may need shelter from too much hot sunshine until they establish their root system. Snails and slugs can eat seedlings in a single night, so also use a pet- and wildlife-friendly, iron-based snail bait to protect new plants. Chef Janine's Top 7 Vegetables To Plant In Spring Juicy tomatoes are simple to grow and add unbeatable flavor to salads. TOMATOES Tomatoes are often the first plant a new veggie gardener aspires to. It's little wonder - with so many different varieties available, the backyard can produce a smorgasbord of color, size and flavor. You can plant at least three varieties – sometimes many more – my favorite is Black Russian. Give plants plenty of room to grow (follow the recommended plant spacing on the plant label or seed packet) and train them up a tall stake. Tomatoes need to be regularly watered and protected from late frosts in spring as well as hot spells. Begin feeding from when the yellow flowers appear. Protect from fruit fly with organic fruit fly baits, or for a fuss-free crop, grow cherry tomatoes. There are compact tomato varieties (look for Patio tomatoes) to grow in containers. Ask your nursery store. Eat home grown tomatoes fresh or cook them up into sauces and chutneys. Zucchinis are very easy to grow - share them with friends and neighbors! ZUCCHINI These are generally the most bountiful of plants if you plant more than three or four plants. I love to cook with zucchini almost every week. It goes fantastic with Asian and Italian dishes. If you are not on COMFORT KETO program and cook yourself, you will surely find lots of zucchini recipes online. Zucchinis are spreading plants (observe the recommended spacing and give them plenty of space to grow). Keep plants well watered. The fruit tends to form in summer once the female flowers appear. Once they start, they mature rapidly so check and pick frequently. They are then harvested through summer and into autumn until the plant succumbs to powdery mildew and calls it a day. Fresh cucumbers are versatile - use in salads, sandwiches, ... CUCUMBER To Chef Janine, nothing equals a freshly picked, home-grown cucumber for flavor and crunch. Cucumbers find their way into Chef Janine's sandwiches, salads and homemade tzatziki (yogurt and cucumber dip). If you have more than you can eat fresh, they are bottled as bread and butter cucumbers to eat later. Cucumbers are easiest to manage grown on a climbing frame or tepee. Where there’s not much space, grow cucumbers in a large pot (at least 1.5 ft across). Train the vines up a climbing frame. Smoky grilled eggplant tastes delicious! EGGPLANT This delicious vegetable has pretty flowers and is very attractive to grow in the garden (or a container). It is usually trouble-free. There are varieties with small fruit which crop quickly. Grill eggplant on the barbecue or turn it into a delicious baba ganoush. Take your home-made salads to the next level with fresh lettuce. LETTUCE Some leafy green is a must in every veggie bed or container vegetable garden. Growing a range of loose-leaf lettuce with a selection of leaf shapes and colors makes for interesting salads. Traditional Iceberg lettuce can also be rewarding to grow. Plant some sort of lettuce as seed or seedling every few weeks so there’s always some to harvest and more growing. Beans provide an abundant crop. BEANS You may choose both climbing beans (grow climbers up a tepee or on a trellis) and bush beans (suitable for pots or the edge of a garden bed). You may also dry them for eating during autumn and winter. Beans are easy to grow and crop heavily. Once the beans start to form, pick them daily as they taste best when they are young and tender. The exception is beans grown for drying (such as Borlotti or Scarlet Runner), which are left to mature and dry on the vine. Sweet peppers mature in 60-90 days. Hotter peppers take longer. CHILI PEPPERS Let’s talk about growing chili peppers. Chili peppers start off a bit slow, so it is helpful to start to grow your plants indoors a few weeks (anywhere from 8-12 weeks) before transferring them outside. Keep the early soil and budding plants constantly moist, but do not over water. Keep them warm (80 -85 degrees F is best) and in a sunlit place. If this is your first time growing your chili peppers from seeds, learn more about growing chili peppers from seed. We wish you happy gardening. - Best SoCal Places and Time To Enjoy The California Poppies In Full Bloom.
Orange is the color of optimism. One of the best ways to soak up the spectacular colors and boost your spirits this spring is by seeking out fields of magical California poppies in full bloom covering mountains and seaside meadows (especially in late March and early April). Don’t miss out on a rejuvenating wildflower walk this spring. You can find the best blooms with this guide on where to see poppies in Southern California. April 6 of each year is officially designated as California Poppy Day. Walker Canyon Address: Lake St, Lake Elsinore, CA 92530 Contact info: (858) 467-4201 Peak bloom: Mid-March Cost: Free Just keep in mind that parking is limited. In 2019, a shuttle service was set up to take people from the Lake Elsinore Outlets to the trailhead, so this is a good option in a super bloom year. Anza-Borrego State Park Address: 200 Palm Canyon Dr., Borrego Springs, CA 92004 Contact info: (760) 767-4205 Peak bloom: Mid-March Cost: $10 to park Stop by the Desert Nature Center, run by the Anza-Borrego Desert Natural History Association at 652 Palm Canyon Dr. Chino Hills State Park Address: 4721 Sapphire Rd, Chino Hills, CA 91709 Contact info: (951) 780-6222 Peak bloom: Mid-March Cost: $10 Little purple flowers called “blue dicks” are also usually interspersed through the orange, perfectly contrasting the poppies. It’s a great walk in early spring but there’s no shade on these grassy hills, so it’s not a hike for a hot day. Malibu Creek State Park Address: 1925 Las Virgenes Rd., Cornell, CA 91301 Peak bloom: Mid-March Cost: $12 to park Closer to the coast, Point Dume has stunning hiking trails along the bluffs, where you can enjoy wildflowers at your feet and views over the Pacific Ocean. Antelope Valley California Poppy Reserve Address: 15101 Lancaster Rd, Lancaster, CA 93536 Contact info: (661) 724-1180 Peak bloom: Mid-March Cost: $10 to park If Antelope Valley California Poppy Reserve is too crowded, head seven miles west to Arthur B. Ripley Desert Woodland. This is where poppies and wildflowers grow between otherworldly Joshua Trees. A Few Quick Tips Call the Wildflower Hotline: (760) 767-4684 for updates on California poppy fields. Visit mid-morning: after the poppies have opened up but before the afternoon winds disturb the blooms. Sunset is also a good time. Come prepared to hike with good shoes, plenty of water, and snacks. Get down low to take pictures of the orange flowers with a blue sky as the background for a more impressive shot. Stick to the trail, as wild California poppies are delicate and easily destroyed by trampling. For more information on California poppies, please contact the Native Plant Program at nativeplants@wildlife.ca.gov. A little More Information On These Cheerful Flowers On March 2, 1903 the California poppy, Eschscholzia californica, became the official state flower of California (Ca. Government Code Section 421). The plant's bright orange flowers are an unmatched symbol of the Golden State. This cheerful plant's bright orange flowers were perhaps viewed as a floral representation of the “fields of gold” sought during the gold rush. Indigenous Americans even once used California poppies as medicine to combat anxiety and as a sleep aid. The California poppy is commonly seen blooming in the spring and summer along country roads and freeways throughout much of the state. It is often believed that there are laws prohibiting the cutting or damaging of the California poppy because it is the state flower. While there is no law protecting the California poppy specifically, California Penal Code Section 384a requires written landowner permission to remove and sell plant material from land that a person does not own, and removing or damaging plants from property that a person does not own without permission may constitute trespass and/or petty theft. However, these laws do not prevent the collection of California poppies on private land by the landowner. California poppies are a beautiful and easy-to-grow addition to your garden, and although you may choose to pick them from your property, they last much longer in the ground!

- 🌼💛🌿Hello, I'm A Dandelion. People Call Me A Weed, But I'm A Super Herb!
I'm here because your soil needs my help so best you let me grow without disturbing me! When everything is fixed, I will disappear again, I promise! When you see me, remember that I'm the ONLY one who wants and can grow in that particular acidic spot, lacking calcium. Because: If the soil is too compact / hard / stomped and I want to loosen it for you with my roots. Or there is too little calcium in the soil - don't worry, I will replenish that for you with the dying of my leaves. Or the soil is too acidic. But I will also improve that for you if you give me the chance. Or a mixture of the above reasons, of course. Are you trying to remove me prematurely with my root? However meticulous you are, I will return twice as strong! Just until your soil is improved. You can even tell by my growth at which stage my help is at. If my leaves are flat on the ground then I'm far from ready but if they all reach up then I'm already a long way on my way. Something completely different is that I am one of the first bloomers in spring, so I will announce spring / summer for you. During the day when it's hot, I open my flowers but in the evening when it cools off I close them again quickly. In fact, if it's not hot enough during the day I won't open them at all! My flowers are the first food for insects after hibernation and unlike most other plants, I have pollen AND nectar, not merely one OR the other! And I am generous with them! My flowers are even delicious for you people by the way, did you know? I used to be called ′′honey (or gold) of the poor′′ because my flowers are so sweet in e.g. jam, sauce or salad! The internet is full of recipes - check them out. But wait until the end of May or later before you start picking and even then, don't pick everything yet! The biodiversity and bees will be very grateful!” Dandelions Are Herbs, And Have Many Health And Nutritional Benefits! Dandelions pop up overnight to blemish a perfect green lawn and crowd out the petunias in your flower garden. But instead of going to war with the ubiquitous yellow weeds, you want to welcome them into your kitchen. Why should you add them to your diet? Let us count the ways. Nutritional Benefits Dandelions are probably the most nutritionally dense green you can eat — outstripping even kale or spinach. Dandelion greens, in particular pack a whole lot of vitamins and minerals such as: Vitamins A, C and K Folate Calcium Potassium Health Benefits Besides being chock-full of nutrients, dandelions contain compounds that may help prevent health problems. Unfortunately, scientists don’t focus a lot of attention on wild herbs and plants. More research is needed to confirm everything dandelions can do. Provide Antioxidants Dandelions contain several different types of antioxidants throughout the roots, leaves and flowers, Geib says. Antioxidants protect your body against free radicals — rogue molecules that can damage your body’s cells and make you age faster. Reduce Inflammation Chronic inflammation in the body plays a role in a long list of serious health problems, including cancer and heart disease . One way to stay healthy is by eating foods that fight inflammation. Lab studies have found that compounds in dandelion can dial down inflammation. Definitely add dandelion to your anti-inflammatory diet in addition to the below listed recommendations: Choose nutrient-dense fresh berries and vegetables to obtain the most nutritional bang for your buck. Radically reduce/entirely eliminate nutrient-poor inflammatory foods such as refined starches (white versions) and added sugars (white or brown sugar, soda, energy drinks) from your diet . Choose poultry, fish, eggs and whole Greek yogurt as your quality sources of protein, calcium, vitamin D, probiotics and unsaturated fat. Radically reduce/entirely eliminate saturated fat loaded processed meats like bologna, salami and hot dogs. Choose monounsaturated fats (olive oil, avocados and nuts) and omega-3 fats (wild salmon and tuna, walnuts, and ground flaxseed) that our bodies cannot make. These healthy fats from food or ass supplements neutralize inflammation, decrease risk of heart disease and cancer. Choose healthy saturated fats such as butter, cheese, high-fat red meat and skin on poultry. Avoid trans fat altogether. They still lurk in flavored coffee creamers, microwave popcorn. Manage Blood Pressure Dandelions are rich in potassium, which makes them a natural diuretic. In other words, they make you pee. Diuretics are often used to help control high blood pressure. Control Blood Sugar Dandelion has been used around the world as a natural way to control Type 2 diabetes. Researchers are still investigating that link, but studies in animals suggest that the compounds in dandelions might help reduce blood sugar levels in people with diabetes. Lower Cholesterol Studies in animals have found that extracts from dandelion roots and leaves can naturally lower cholesterol levels. How To Eat Dandelions The great thing about the dandelion is that every part of the plant is edible. Here are a few tips for preparing this free-range herb: Greens: Dandelion leaves are on the bitter side, but they have a spicy kick similar to arugula. Try tossing some fresh, washed leaves into a salad. Soak the leaves in cold, salted water for 10 or 15 minutes followed by blanching (dip into boiling water for a few seconds) them in order to take the edge off the bitterness. You may also sauté the blanched greens with some olive oil, onion or garlic and top with Parmesan cheese. Flowers: Dandelions’ sunny blossoms give color to a salad. Use them fresh or dried to make dandelion tea — or brew dandelion wine. You can try infusing them into oil or vinegar, too. Dandelion-infused oil can also be used to make a salve that’s great for muscle aches. Roots: Roasted dandelion roots are used in a tasty drink similar to coffee. You can find dandelion-based coffee substitutes at health food stores. Dandelion Supplements Can you get the goodness of dandelion from supplements and extracts? Possibly, but since there is not a lot of research on dandelion supplements, there aren’t clear dosage guidelines. Most foods pack the biggest nutritional punch if you eat them fresh — and dandelion is probably no exception. But if you’re not a fan of their flavor (or the plants are out of season), talk to your doctor about whether dandelion supplements might be beneficial. Make sure to chat with your healthcare provider if you take certain medications. Dandelion supplements may interact with some drugs, including: Lithium Blood thinners Certain antibiotics Diuretics (aka water pills) Some heart and blood pressure medications Should You Add Dandelions To Your Diet? Dandelions have a lot going for them, but there are some things to know before serving them for dinner. You can pick the blossoms right from your yard, “but — if you’re harvesting wild dandelions — make sure you’re picking them from an area you know hasn’t been treated with pesticides or other chemicals.” You don’t need to eat them every day to reap the benefits (though you could if that’s your jam). Approach them like any other herb and adding them into the rotation as part of a varied and colorful diet.
- "Quiche Lorraine" — Enjoy Warm Or Cold, At Home Or On The Road
A French Classic with German Roots The word quiche traces back to the German word Kuchen, meaning “cake.” While today quiche is celebrated worldwide as a beloved French specialty, its earliest origins reach into the historic region of Lorraine — known in German as Lothringen — a medieval territory south of Luxembourg where French and German culinary traditions blended together for centuries. The earliest version of Quiche Lorraine was remarkably simple: a rustic open pastry filled with eggs, cream, and smoked bacon. Cheese, now commonly associated with quiche, was not originally included. Over time, French cooks refined and elevated the dish, introducing richer textures, regional cheeses, aromatic herbs, and more sophisticated preparation techniques that transformed quiche into the elegant comfort food recognized today. The earlier versions of Quiche Lorraine was simple: an open pastry filled with eggs, cream, and smoked bacon. Although quiche is strongly associated with French cuisine, egg-and-cream pastries appeared throughout medieval Europe long before modern culinary borders existed. Italian and English kitchens of the 13th and 14th centuries also prepared savory custard pies using combinations of cream, eggs, herbs, and pastry crusts. Quiche remained relatively unknown outside of Lorraine until the mid-20th century. By the 1960s, it slowly gained popularity in the United States, where it became associated primarily with breakfast and brunch. In France, however, quiche was often enjoyed as a light evening meal, traditionally served later at night alongside salad, wine, and simple table fare. Today, countless gourmet interpretations exist throughout the world. From Salmon & Leek Quiche and Spinach Broccoli Quiche to Mushroom, Gruyère, and Mediterranean-inspired versions, the dish has evolved into a versatile culinary canvas capable of adapting to nearly every regional flavor profile and dietary preference. The Comfort Keto Interpretation Chef Janine of COMFORT KETO invites you to experience her ketogenic interpretation of the classic Quiche Lorraine — a luxurious European comfort dish thoughtfully adapted for low-carb living. While today quiche is celebrated worldwide as a beloved French specialty, its earliest origins reach into the historic German border region of Lothringen. This version features seasonal organic kale, finely chopped onions, rich cream custard, smoky bacon, and a delicate touch of warming nutmeg. Chef Janine combines Monterey Jack and cheddar cheeses to create a beautifully balanced flavor profile with exceptional melt and texture. The result is a deeply satisfying quiche with a golden-brown crust, creamy interior, and wonderfully fluffy melt-in-your-mouth consistency. Unlike many heavy brunch-style quiches, COMFORT KETO’s Quiche Lorraine remains light while still being rich and comforting. It is equally enjoyable warm from the oven or chilled the next day, making it ideal for breakfast, brunch, lunch, supper, or elegant on-the-road dining. - Potentially Fatal Weight Loss Injections: Ozempic
Once-weekly injection drug Ozempic for diabetes (or Wegovy for weight loss) ---both Novo Nordisk produced and "FDA approved"-- has been the advertised across the main stream media and social media platforms to have caused countless Hollywood stars to slim down at a rapid pace without any dietary restrictions. The medicine has gained momentum and global popularity thanks to it's "perceived" weight loss benefits. So, what's really going on with these once-weekly injectables??? These drugs are expensive, with Wegovy costing $1,349 a month and Ozempic $892 if they're not covered by insurance! The Oct. 2023 study published in the Journal of the American Medical Association found that people who take Ozempic (or Wegovy) for weight loss, are at risk of severe stomach problems. The main culprit is the active drug ingredient "semaglutide" distributed under the brand names Ozempic and Wegovy. Semaglutide is a Glucagon Like Peptide-1 (GLP-1) receptor agonists. What does that even mean? Simple: An agonist is a chemical that activates a cell receptor to produce a "desired" biological response. Here are the responses which GLP-1 produces: Apparently, the brain and the neurological system, the heart and cardiovascular system, the liver benefit from GLP-1. GLP-1 also helps pancreas with insulin activity, thus reduces the glucose levels in the blood. Good thing regarding type II diabetes management. But, what about obesity management? Let's look at the GI Track, shall we? Semaglutide works by suppressing appetite, but side effects such as muscle loss, nausea, and diarrhea have been reported, and it's common to regain the weight after stopping treatment. Obviously, GLP-1 causes the sensation of satiety, causing the person on Ozempic to eat less. GLP-1 causes gastric emptying. That means instant vomiting and diarrhea as soon as the person consumes any food. That sounds good but is it really a good thing? Not at all. The reason is simple: The body is receiving absolutely NO NUTRITION what so ever. This means, the body is brought into the state of forced anorexia. The body now steals all the fat it has stored to burn as fuel; thus weight loss occurs. However, in order to function at the minimum level, besides fat, the body starts stealing protein from the muscle mass, and minerals from wherever there are deposits across the body. The body is now eating itself. This situation can be corrected to receive nutrition only through gastric bypass intervention. YIKES! Gastrointestinal peristalsis caused by GLP-1 is the reduction and even stoppage of the automatic wave-like movement of the muscles that line your gastrointestinal tract. That is the paralysis of the stomach which may in worst case scenario means rotting foods in the stomach for several weeks. This is TERRIBLE! Experts are warning there could be another side effect from the often-unsupervised use of Ozempic: DEATH!!!

- "Chicken Enchilada" Casserole with Nopales Cactus; Yummy!!!
Few dishes capture the warmth and satisfaction of authentic Mexican comfort food quite like a hearty enchilada casserole. Rich layers of savory chicken, melted cheeses, vibrant salsa verde, and traditional fiesta seasonings create the kind of deeply comforting meal people return to again and again. Chef Janine’s Chicken Enchilada Nopales Casserole brings that same authentic experience into the world of ketogenic cuisine — without sacrificing flavor, texture, or soul. All the authentic flavor, texture, and soul of the classic Chicken Enchilada Nopales Casserole—without the carbs. Inspired by traditional Mexican home cooking and elevated through COMFORT KETO’s signature gourmet approach, this dish combines tender pulled chicken breast, authentic Mexican blend cheeses, sliced olives, crushed pork rinds, roasted salsa verde, and strips of nopales cactus into a deeply satisfying low-carb casserole bursting with bold flavor. The addition of nopales cactus gives this dish an unmistakably authentic Mexican character while naturally replacing the starch-heavy ingredients typically found in traditional enchiladas. Finished with fresh chives, sour cream, and house-made guacamole or pico de gallo, this casserole becomes a rich, nourishing meal suitable for lunch, dinner, gatherings, or meal prep throughout the week. This is one of those timeless COMFORT KETO dishes that feels equally at home on a busy weekday, at a family table, or as part of a relaxed weekend feast. A Rich History Rooted in Ancient Mexico Who Invented The Enchilada First? The Aztecs were the first civilization known to develop the earliest form of the enchilada. Spanish conquistador Bernal Díaz del Castillo entered the Aztec capital of Tenochtitlán in 1519 When the Spanish conquistador Bernal Díaz del Castillo entered the Aztec capital of Tenochtitlán in 1519, he was astonished by the sophistication and variety of the foods being served. Among the many elaborate dishes presented was a simple yet flavorful preparation believed to be one of the earliest recorded enchiladas — tortillas wrapped around fillings and enhanced with chili-based sauces. This is considered one of the first mentions of enchiladas in European culinary literature. Aztecs served the earliest recorded enchiladas in richly colored Cholula pottery. Aztecs served these early enchiladas in beautifully crafted Cholula pottery, reflecting the importance and refinement of their culinary traditions. When Mexico became a fully established colony under the Viceroyalty of New Spain, the dish evolved dramatically as Spanish colonial influences introduced new ingredients such as cheese, pork, and chicken. Chili-based sauces and cream-based preparations also became more common, helping enchiladas gradually develop into an integral part of Mexico’s culinary culture. By the mid-18th century, enchiladas were viewed as neither purely Spanish nor entirely Aztec, but distinctly Mexican. Over time, they became one of the country’s most beloved and recognizable national dishes. When the United States annexed Texas (1845), California, and much of the Southwest (1846–1848), Mexican cuisine began making its way into American food culture — laying the foundation for what would eventually become known as Tex-Mex cuisine throughout the American Southwest. Today, enchiladas remain one of the most iconic expressions of Mexican comfort food tradition. Chef Janine’s Ketogenic Interpretation Chef Janine’s Chicken Enchilada Nopales Casserole stays faithful to the soul of traditional enchiladas while carefully eliminating the heavy starches and processed ingredients that typically make the dish unsuitable for ketogenic lifestyles.
