The Texas Smokehouse BBQ Plate
Chef Janine’s Texas Smokehouse BBQ Plate features three delicious smoked meats:
• Beef rib (one full rib)
• Beef brisket (4 oz)
• Smokehouse sausage (one whole link)

All three meats are smoked together low and slow with hickory wood. Hickory gives the meats a deep, bold smoky flavor that defines traditional American barbecue and fills the air with an irresistible smokehouse aroma guaranteed to make everyone’s mouth water.
Chef Janine carefully selects cuts of meat that are high in fat, richly marbled, and layered with thick connective tissue. Such cuts contain large amounts of collagen, which naturally makes the muscles tough and chewy. During the long smoking process, however, low heat slowly breaks down the collagen, transforming the meat into tender, juicy perfection while allowing it to absorb layers of smoky flavor.
Brisket comes from the lower chest of the cow — a heavily worked muscle that supports much of the animal’s body weight. Because of its dense connective tissue and rich marbling, brisket is considered one of America’s most iconic barbecue meats. A full brisket can weigh anywhere from 8 to 20 pounds before trimming and smoking.
Beef ribs likewise require patience, low heat, and many hours in the smoker to fully develop their rich texture and deep flavor profile.
The Mediterranean Grill Assortment Plate
The second featured platter celebrates the ancient open-fire grilling traditions of the Eastern Mediterranean — cultures famous for transforming meats into beautifully seasoned kebabs and grilled specialties over glowing charcoal or open flame.
Chef Janine’s Mediterranean Grill Assortment Plate features:
• Flame-grilled beef kabobs
• Marinated chicken kabobs
• Traditional beef-lamb koftahs
Unlike smoking, which slowly cooks meats over indirect heat for many hours, grilling exposes meats directly to high heat and open flame. This method quickly caramelizes the outer surface of the meat, creating rich charred flavors, smoky edges, and juicy interiors.
The beef kebab is prepared from carefully selected cuts with excellent marbling for tenderness and flavor.
The chicken kebab is marinated to remain exceptionally juicy while developing a lightly charred exterior over the grill.
The beef kofta — seasoned ground beef formed around a skewer — reflects one of the oldest grilling traditions in the Mediterranean and Middle East. Richly seasoned and flame grilled, kofta develop a deep savory flavor and distinctive grilled aroma that pairs perfectly with the kebabs.
