Legend says the dish dates back to the Ottoman era and may have earned its name from a compliment given by the Ottoman Sultan, Yavuz Sultan Selim. After tasting the dish during a visit to Antep in the 16th century, he reportedly asked:

“Which gentle hand prepared this elegant meal?”(“Hangi eli nazik yaptı bunu?”)
