Why Is Some Beef Fat White While Other Beef Fat Is Yellow?
Many people are surprised to see yellow fat on certain cuts of beef, but fat color is often a reflection of the animal's diet. Grain-fed cattle typically produce white, highly marbled fat, while cattle raised primarily on pasture may develop yellow or golden fat due to naturally occurring carotenoids found in grass. Although fat color alone does not determine quality, it can provide useful insight into how the animal was raised and fed.
